Plant-Based Rocky Road
Ingredients
- 170g cacao butter
- 110g cacao powder
- 60g coconut nectar (or liquid sweetener of choice)
- 1 tsp vanilla essence
- ⅓ cup almond butter
- ¾ cup roasted nuts (we used almonds and hazelnuts and pistachios)
- ⅓ cup goji berries
- ⅓ cup freeze-dried raspberries
- ¾ cup puffed cereals (we used quinoa puffs or popped popcorn)
- ½ cup toasted buckwheat
- Pinch salt
- 1 tsp orange zest
Directions
- In a large bowl, over a double boiler on the stove, melt the cacao butter then add cacao powder and coconut nectar and mix to combine into a smooth chocolate. If you don’t want to make your own chocolate, you can substitute 350 grams of dark chocolate and 1 Tbsp of coconut oil then combine.
- Now fold in the remaining ingredients until well combined.
- Pour mix into a lined 20x20cm baking tin and refrigerate for 4 hours or overnight until set.
- Cut into your desired size pieces and enjoy with your loved one.
