Plant-Based Rocky Road

Ingredients

  • 170g cacao butter
  • 110g cacao powder
  • 60g coconut nectar (or liquid sweetener of choice)
  • 1 tsp vanilla essence
  • ⅓ cup almond butter
  • ¾ cup roasted nuts (we used almonds and hazelnuts and pistachios)
  • ⅓ cup goji berries
  • ⅓ cup freeze-dried raspberries
  • ¾ cup puffed cereals (we used quinoa puffs or popped popcorn)
  • ½ cup toasted buckwheat
  • Pinch salt
  • 1 tsp orange zest

Directions

  • In a large bowl, over a double boiler on the stove, melt the cacao butter then add cacao powder and coconut nectar and mix to combine into a smooth chocolate. If you don’t want to make your own chocolate, you can substitute 350 grams of dark chocolate and 1 Tbsp of coconut oil then combine.
  • Now fold in the remaining ingredients until well combined.
  • Pour mix into a lined 20x20cm baking tin and refrigerate for 4 hours or overnight until set.
  • Cut into your desired size pieces and enjoy with your loved one.
