To celebrate International Day of Happiness on March 20th, our Aro Ha kitchen team have whipped up a special berry sorbet recipe that's bound to make you smile. Sorbet is soul food, but it's also good to know this recipe is gluten-free, dairy-free, and refined sugar free. Get blending, get scooping and enjoy.


Happiness Berry Sorbet


Ingredients

  • 400g Blackberries, frozen or fresh (or fruit of choice)
  • 100g Simple syrup (recipe below)
      • 1/2 cup Monk fruit sweetener
      • 1/2 cup Water
  • 1 Tbsp Lemon juice
  • 1/4 tsp Guar gum

Directions

Firstly, prepare the simple syrup by diluting monk fruit sweetener and water in a small sauce pan. This should take approximately 5 minutes.

Blend all ingredients.

Pour into ice cream machine, or alternatively, place into popsicle moulds or a freezer friendly medium container.

In an ice cream machine, turn dial to be churned for 30 minutes, up to 1 hour.

Popsicle moulds will be ready in 4-8 hours.

In a container, after 1 hour in the freezer, scrap with a fork. Then every couple hours scrap with a fork break it apart. This will create a more granita effect.

Remove from freezer after recommended time, and enjoy.

Notes

Monk fruit sweetener is used here, but can be substituted for regular sugar. Monk fruit doesn’t contain fructose. It still contains the sweetness but has significantly lower glycemic index than sugar.

The guar gum, though a specific ingredient is key here as it helps to thicken and bind the sorbet together.
